Carrot Cake Recipe

A fun way to celebrate spring on your table

Recipe: You Bunnies Favorite! CARROT CAKE

2 c. flour
2 t. baking soda
½ t. salt
2 t. cinnamon
3 eggs
2 cups sugar
¾ c. oil
¾ c. buttermilk
2 t. vanilla
2 c. grated carrots
1 (8 oz) can crushed pineapple, drained
3 ½ oz flaked coconut
1 c. chopped pecans or walnuts

Line 3 (9” round cake pans with wax paper, lightly greased and flour pans
Stir together flour, baking soda, salt and cinnamon. Beat eggs, sugar oil, vanilla, and buttermilk with electric mixer. Add flour mixture beating low speed until blended. Fold in carrots, pineapple, coconut & nuts. Pour batter into pans. Bake at 350 degrees for 25- 30 min or until a wooden pick inserted in center comes out clean. Cool on wire rack. Frost each layer with cream cheese frosting
